Wondering what pastelles are? One of Trinidad’s most beloved Christmas dishes, these corn flour “parcels,” similar to tamales, are traditionally stuffed with a savory beef filling and steamed in banana leaves.
We are putting a gourmet twist on our pastelles this year. Rather than the ground beef commonly used, we are braising beef chuck in Trinidadian green seasoning until tender, then finely chopping this meat filling, for a more delicate and refined texture. The filling is also flavored with chilies, raisins and capers, balancing savory and sweet elements. Our pastelles are also heavy on the meat filling and light on the masa.
Finally, we are pairing it with a non-traditional mole made with Trinidadian Trinitario chocolate and jerk seasonings.
